Why cream cheese separates

Cream cheese is an emulsion of fat and water held together by a delicate protein structure. Ice crystals break that structure, and on thawing the water runs out.

You cannot prevent it, but you can work around it: thaw it and beat it, or use it only in cooked or baked dishes where the texture does not matter.

How to freeze hard cheese properly

  1. Grate it first if you plan to cook with it. Grated cheese thaws faster and you can take out only what you need.
  2. Wrap tightly — cling film pressed against the surface, then a freezer bag with the air squeezed out. Air is what causes freezer burn.
  3. Label with the date. Hard cheese keeps 6 months; parmesan keeps 12.
  4. Freeze in portions you will actually use. Refreezing after thawing ruins the texture.

How to thaw cheese

In the fridge, overnight. Not on the counter — the outside warms and sweats while the middle is still frozen.

For grated cheese going straight into a cooked dish, you can use it from frozen.

What freezing does to texture

Freezing does not change flavour much. It changes texture: hard cheeses become more crumbly because the protein network is disrupted.

That makes frozen hard cheese excellent for grating, melting and cooking — and poor for a cheese board.

Does freezing kill bacteria?
