How Long Do Dried Herbs Last?
Dried herbs do not go mouldy so much as go quiet. They look fine and taste of dust. Most lose real potency within 6–12 months.

Whole keeps far longer than ground. Grinding exposes far more surface area to air. Buy whole seeds and crush them when you cook — the difference is not subtle.
The crumble test
Take a pinch and rub it between your fingers:
- Crumples and releases a strong smell — still good
- Crumples but smells faint — weak; use double the amount
- Feels like dust, or will not crumble at all — dead. Compost it.
Colour is a guide too: good dried oregano is green-grey. If it is uniformly brown, the oils have oxidised.
How to store them properly
- Airtight glass, not plastic bags — the bags they come in are the worst option
- Dark — light destroys the aromatic oils. A cupboard, not a windowsill rack.
- Cool — above the stove is the worst place in the kitchen
- Whole, not ground — crush at the moment of use
- Label with the date — you will not remember
Why home-dried herbs fade faster
Commercial dried herbs are often dried fast at controlled temperature, which preserves more oil. Air-dried at home they keep less well — especially if they were not fully dry when stored.

Do dried herbs go bad?
They rarely become unsafe, with two exceptions:
- Mould — visible fuzz or a musty smell. Discard.
- Pests — webbing or fine dust in the jar. Discard.
Otherwise an old herb is not dangerous, just pointless. You are adding colour, not flavour.
Reviving the flavour of old herbs
You cannot restore lost oils, but two things help:
- Bloom them in oil or fat — heat releases what is left far more effectively than adding to water
- Use more — up to double, but taste as you go
- Add fresh at the end — a little fresh herb plus old dried herb works better than either alone
