How to Make Elderberry Syrup
Elderberry syrup is easy to make at home for a fraction of shop prices. There is one rule that matters: cook the berries properly.
Safety first
- Raw elderberries are toxic. They contain cyanogenic glycosides that cause nausea, vomiting and diarrhoea. Cooking destroys them.
- Never eat the leaves, bark, roots or stems. Only the ripe cooked berries.
- Remove all green stems. Use a fork to strip berries from the umbels; discard the stems.
- Simmer at least 20–30 minutes, and do not eat the mixture before then.
The recipe
- 1 cup dried elderberries (or 2 cups fresh, de-stemmed)
- 3 cups water
- 1 cinnamon stick, optional
- 3–4 cloves, optional
- 1 tablespoon fresh ginger, optional
- 1 cup raw honey
Method
- Combine berries, water and spices in a saucepan.
- Bring to a boil, then reduce and simmer covered for 30–45 minutes, until reduced by about half.
- Mash the berries against the side of the pan and strain through a fine sieve or muslin. Press well.
- Let it cool below 40°C / 104°F before adding honey — heat destroys honey's enzymes and flavour.
- Stir in the honey until dissolved. Bottle in a sterilised jar.
Yield: roughly 1½ cups from these quantities. It keeps about 2–3 months in the fridge, or 6+ months if frozen in ice cube trays.

What the evidence says
Elderberry has small trials suggesting it may shorten influenza duration by a few days. The trials are modest and some were industry-funded. It is reasonable as a supportive measure, not a treatment.
It is not a substitute for flu vaccination or medical care.
Who should avoid it
- Autoimmune conditions — elderberry stimulates the immune system, which may be counterproductive
- Immunosuppressant medication — possible interaction
- Pregnancy and breastfeeding — insufficient safety data
- Children under 1 — because of the honey
- Anyone with a nightshade or daisy-family allergy — rare cross-reactions
If you cannot find elderberries
Dried elderberries are sold online and in health shops. Frozen ones work too — use 2 cups and simmer the same way. Do not substitute other berries; the recipe depends on elderberry specifically.
